Abstract
Millets are small-seeded grass crops, annual, warm-weather cereals belonging to the grass family Poaceae. The dietary fibre, minerals, phenolicsand vitamins are concentrated in the outer layer of the seed coat, which form the part of food and offer their nutritional and health benefits. Itprovides a good source of nutrients with good digestibility and are called non-allergic grains. Minor millets have high protein content (11%), lowfat (4.2%), very high fibre content (14.3%) and also full of micronutrients like Mg, Ca, Mn, tryptophan, phosphorous, fibre, B vitamins, but theseare considered as poor millets and less attention is given. Millets also contributes to antioxidant activity due to the presence of polyphenol, tannins,anthocyanins and phytosterols. Millets have a beneficiary effect on metabolic diseases.
