Abstract
The amaranth is known to be a very nutritious pseudo cereal with high levels of protein, fibre, calcium and iron. Amaranth seeds wereincorporated at different levels by changing the proportion of bengal gram dhal. For standardization of amaranth seeds dhokla, fourvariations were prepared by utilizing amaranth seeds at 10, 15, 20 and 25 per cent levels of incorporation and along with basic. Theprepared amaranth seeds dhokla variations and basic dhokla were organoleptically evaluated for acceptability. Most accepted variation ofamaranth seeds dhokla and basic dhokla were analyzed for physical quality and nutritional composition. The dhokla prepared with 20 percent incorporation of amaranth seeds was ranked higher in all the sensory characteristics. The physical quality parameters of acceptedvariation of amaranth seeds dhokla with 20 per cent incorporation of amaranth seeds compared to basic shows that, amaranth seeds dhoklahad more poro...
