Abstract
The impact of common bean germination in different elicitors(salicylic acid(0.1,1 and 2mM) ,ascorbic acid(0.5and 1mM) ,sucrose(100 and200mM) and folic acid(0.05 and 0.20mM) alone as well as in combination with phenolic precursors( phenylalanine and tyrosine ) on theproduction of health promoting factors was studied . The influence of elicitation on physical parameters, photochemical and antioxidantactivity of 8 day old common bean sprouts was evaluated. Elicitation by ascorbic acid (1mM) in combination with precursor feeding withphenylalanine led to the highest total phenolic content and total flavonoid content with increased percentage of 275.45 and 642.04 percentrespectively as compared to control. Elicitation resulted in a considerable increase in the antioxidant potential of sprouts, which was foundto be highly and positively related to total phenolic content.
